Young Coconut Pudding



1 piece young coconut meat, shredded
1 loaf bread of any old bread
2 cups evaporated milk
1 cup sugar
¼ cup margarine
1 tsp vanilla
Cheese (optional)
Slice bread into small piece.
Soak bread in evaporated milk overnight.
Add buko (young coconut meat), margarine and vanilla over soaked bread and pour in greased pan.
Bake until golden brown and sprinkle with cheese when almost done.

"Raisin- Coconut Cookies"


250g sifted all-purpose flour
250g toasted coconut
250g raisins
160g sugar
125g margarine or butter
120ml evaporated milk
2 pieces eggs
2tsp baking powder
1 tsp vanilla
½ tsp fine salt
Sift flour, baking powder and salt together. Set aside. 
Cream the butter, and then add sugar and eggs until smooth and well blended.
Add half of dry ingredients, mix well. Pour in the milk and vanilla, continue mixing. Add remaining dry ingredients, coconut residue and raisins. Mix until well blended.
Drop heaping teaspoonful’s onto greased cookie sheets. Press with fork to flatten.
Bake in preheated oven at 3500F for about 15 minutes or until done.(Coconut Based Recipes India, Indonesia, Philippines and Thailand.
